Chinese Sausage Fried Rice

Fragrant fried rice with Chinese sausage, eggs, garlic, green onions, and soy, balanced between savory, slightly sweet, and smoky.

Method

    Break up the cold rice so the grains are mostly separate before cooking.

    Cook the sliced Chinese sausage in a hot wok or skillet until lightly crisp and the fat has rendered. Remove and reserve.

    Add a little oil if needed, then scramble the eggs until just set. Remove and reserve.

    Add the vegetable oil, then stir-fry the garlic and the white parts of the green onions until fragrant.

    Add the rice and stir-fry until hot and separated. Season with soy sauce, dark soy sauce, sesame oil, and white pepper.

    Return the Chinese sausage and eggs to the pan, toss everything together, and finish with the green onion tops.
