Sesame Noodles with Ground Beef
Rich and savory sesame noodles topped with seasoned ground beef, finished with fresh herbs and sesame seeds

Method

Bring a large pot of salted water to boil. Cook Chinese egg noodles according to package directions until al dente. Drain and rinse with cold water to stop cooking.

While noodles cook, make the sesame sauce by whisking together tahini, sesame oil, soy sauce, rice wine vinegar, brown sugar, and chili sauce (if using) in a large bowl. Add 2-3 tablespoons of hot pasta water to thin if needed.
The sauce should be smooth and pourable - add more hot water if it's too thick - 3
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, for 5-6 minutes until browned.

Add minced garlic and ginger to the beef and cook for another minute until fragrant. Season with salt and black pepper to taste.

Add the cooked noodles to the bowl with sesame sauce and toss well to coat evenly.
Use tongs to really get everything mixed - the noodles should be glossy with sauce - 6
Divide noodles among serving bowls and top with the seasoned ground beef.

Garnish with sliced green onions, toasted sesame seeds, and fresh cilantro if desired. Serve immediately.
